Cauliflower Crust Veggie PIzza

D and I found a recipe for, oh-my-gosh-what, a cauliflower pizza?! Yes, I was skeptical’s number one fan. Luckily, the pizza won! It’s healthy, delicious, and rewarding work… I mean, I’d be okay with a food processor doing all the initial hard work, but I didn’t have one! (Of course, 3 days later I am gifted one from the 1970′s that my parents never use!) See pictures and directions below. Definitely worth a try, but give yourself some time – - about an 1hr or so of preparation without food processor!

Half of a larger cauliflower

1 Egg

1/4 teaspoon of sea salt

1 teaspoon of dried basil

1/2 teaspoon of dried parsley

1/2 cup of mozzerella cheese (shredded)

Veggies of choice (tomato, avocado, mushrooms)

Pizza Stonewear or Pizza Peel


Wash and cut florets off the larger head of cauliflower

Cut up each floret into small, snow-like bits. This will probably take a good thirty minutes to really get down to size.

Once the snow is ready, put it in a bowl, cover with plastic wrap and microwave for 3 minutes.

Remove and let it sit.

Once it has cooled off some, take the cauliflower snow, wrap it up in a towel and squeeze excess water out of the cauliflower. This vegetable absorbs water really well, so make sure you squeeze out as much as possible!

Once you have done that, mix in the mozerella, spices, and egg.

Take this mixture and form it into a round crust on your pizza stone!
